Known as paneer in Urdu, cottage cheese is a soft fresh cheese made from milk (fresh milk not packaged milk). It can be eaten plain or flavoured with various herbs and spices. It is made by bringing milk to a boil after which an acidic ingredient (can be yoghurt, vinegar or lemon juice) is added, which results in the milk separating into curds and whey. The curds are drained resulting in soft cottage cheese or pressed to make a hard cottage cheese.
